
Prawns with Green Tea Noodles
This recipe uses chai (green tea) noodles or buckwheat (soba) noodles to bring magic to the dish. It is scented with greens and seafood and sesame. You can also use nutty brown rice in this dish.

Ingredients
| 4 | thinly sliced onions | |
| 12 | prawns with tails, peeled, deveined, cooked | |
| 1 | broccoli bunch, sliced diagonally | |
| 1/2 pound | 225 g | soba or green tea noodles |
| 2 tsp | 10 ml | toasted sesame seeds |
| 1 tsp | 5 ml | sesame oil |
| 2 tsp | 10 ml | sunflower oil |
| 1 tbsp | 15 ml | mirin |
| 2 tbsp | 30 ml | tamari |
Instructions
- Cook the noodles by the directions on the package. Drain and then run cold water through them. Set the noodles aside.
- Blanch the broccolini in a pan of salted, boiling water for about two minutes. Drain and run cold water through. Set them aside, as well.
- Heat the sunflower oil on medium heat in a frying pan. Add the mirin, tamari, sesame oil, broccolini and noodles. Toss all ingredients together until they are combined and warmed all the way through. Remove them from heat. Toss with spring onion and prawns.
- Divide among four plates. Serve after scattering with sesame seeds.
