
Punjabi Rajma (Red Kidney Beans)
Every Punjabi household has its own version of rajma, and nothing says comfort food like this dish. It's what you cook on a day you're tired and can't be bothered to cook too much. This dish is made considerably easier if you already have the Onion Masala on hand (see Tip), but you can always make them together, which is what the recipe calls for. It's also a recipe you can adapt with your favorite type of beans.

Ingredients

| 1.5 cups | 360 ml | diced onion |
| 1 tablespoon | 15 ml | minced ginger |
| 1 tablespoon | 15 ml | minced garlic |
| 1 cup | 240 ml | diced tomato |
| 1 teaspoon | 5 ml | ground cayenne pepper |
| 1 teaspoon | 5 ml | ground turmeric |
| 1 teaspoon | 5 ml | Garam Masala |
| 1 teaspoon | 5 ml | ground cumin |
| 1 teaspoon | 5 ml | salt |
| 1 teaspoon | 5 ml | ground coriander |
| 1 cup | 240 ml | dried red kidney beans |
| 2 cups | 480 ml | water |
Instructions
Vegan. Serves 6.
Prep time: 10 minutes. Bean/Chili: 30 minutes high pressure. Sauté: 5 minutes. Release: Natural 10 minutes, then Quick. Total time: 1 hour 5 minutes.
- Put the oil into the inner cooking pot of the Instant Pot, and add the onion, ginger, garlic, tomato, cayenne, turmeric, garam masala, cumin, salt, and coriander. Stir to combine.
- Place a trivet on top of the onion mixture.
- Put the beans and water into a heatproof bowl. Cover the bowl with foil. Place the covered bowl on top of the trivet.
- Lock the lid into place. Select the Bean/Chili setting and adjust the pressure to High and the time to 30 minutes.
- After cooking, let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
- Unlock and remove the lid. Carefully remove the bowl of red kidney beans and the trivet.
- Slightly mash about half the beans with the back of a spoon.
- Turn the Instant Pot off, then select Sauté and adjust to More for high heat. Pour the beans and any remaining liquid into the onion masala and mix well. Let the contents come to a boil to meld all the flavors well, about 5 minutes.
Tip: If you have Onion Masala on hand, you can skip steps 1 and 2 and proceed with the rest of the recipe.
