
Quick Cream Pie
Two quick baked pastry sheets sandwiching a thick homemade vanilla custard cream, dusted with icing sugar.

Ingredients
| 2 | eggs (for the dough) | |
| 1 cup | 240 ml | icing sugar (plus a little for dusting) |
| 2 tbsp | 30 ml | oil |
| 1/2 tsp | 2.5 ml | ammonia soda |
| — | flour (as much as it takes) | |
| 1 L | fresh milk | |
| 1 cup | 240 ml | sugar |
| 3 | eggs (for the cream) | |
| 5 tbsp | 75 ml | flour (for the cream) |
| 2 tbsp | 30 ml | starch |
| 2 packets | vanilla |
Instructions
- Beat 2 eggs well with a cup of icing sugar, add the oil, the ammonia soda and flour - as much as it takes - to get a moderately firm dough.
- Divide the dough into 2 parts, roll them out into sheets and bake them separately in a greased tin until lightly golden.
- Put the fresh milk to boil, add the sugar and stir to dissolve. Beat 3 eggs with the flour and the starch, diluted into a slurry with a little cold water. Add the egg mixture to the milk while stirring constantly.
- Continue stirring until the cream starts to "pop". Take the cream off the heat and flavour it with vanilla. Stir it until it cools down.
- In a tray pour the cream over one of the sheets and cover with the other.
- Dust with icing sugar and cut it into pieces.
