
Quick Walnut Cake with Chocolate Pieces and Glaze
A quick walnut cake with chocolate pieces and an espresso-liqueur glaze. Ingredients for a 20 cm diameter pan; measured with a 200 ml cup.
Ingredients

| 1/2 cup | 120 ml | sugar |
| 1 | egg | |
| 1 cup | 240 ml | flour |
| 1/3 cup | 80 ml | strong espresso coffee |
| 1/2 cup | 120 ml | chocolate, chopped into small pieces |
| 100 g | ground walnuts | |
| 1 small packet | vanilla | |
| 1 tsp | 5 ml | baking powder |
| 2 tbsp | 30 ml | For the glaze: strong coffee |
| 1 tsp | 5 ml | rum or a liqueur (orange juice if children will eat it) |
| 100 g | icing sugar (glaze) | |
| 50 g | butter (glaze) | |
| 1 small packet | vanilla (glaze) |
Instructions
- Preheat the oven to 180°C. Line the pan with baking paper and grease with oil or butter.
- Beat the pre-softened butter with the sugar, eggs and vanilla. Add the coffee and stir. Sift the flour mixed with the baking powder, add the ground walnuts and the chocolate pieces. Mix with the eggs and sugar.
- Put the batter in the pan and bake for about 25-30 minutes.
- Meanwhile make the glaze. Melt the butter and add the coffee, the liqueur and the icing sugar. Beat everything with a mixer until it becomes a thick cream. At the end of beating, add the vanilla. If it turns out too thick, thin with a little more coffee; if too runny, add icing sugar. You can make this glaze colorful by adding food coloring.
- Culinary tip: To surprise your guests, divide the glaze into three equal parts. Use three different food-coloring colors — for example pink, yellow and green. You can even make the Bulgarian tricolor. In general, let your imagination run wild.
- Cover the cooled base with the ready glaze and decorate with crushed chocolate pieces.
