Raffaello Macarons

Coconut in the embrace of white rum, pineapple and white chocolate.

Ingredients

100 galmond flour
100 gpowdered sugar
37.5 gegg whites
100 gcrystal (caster) sugar
25 mlwater
37.5 gegg whites
1-2 dropscoconut essence
125 gmascarpone (Raffaello cream)
75 gwhite chocolate (Raffaello cream)
50 gthe solid part of coconut milk with 40% coconut content (Raffaello cream)
1-2 tbsp15–30 mlcoconut milk (Raffaello cream)

Instructions

Method for the cream:

  1. Mix the mascarpone and coconut in a bowl.
  2. Stir until smooth, add the coconut milk too.
  3. Melt the white chocolate over a water bath.
  4. Cool it slightly and add it to the mixture.
  5. Stir until smooth.
  6. Optionally, you can add 1 tbsp ground almonds or coconut flakes to the cream.
  7. Store it in the fridge until assembling the macarons.

Method for the macarons:

  1. Briefly grind the almond flour and powdered sugar in a coffee grinder.
  2. Sift them and pour into a large bowl.
  3. Measure out exactly 37.5 g egg whites and add them to the dry ingredients.
  4. With circular scooping movements begin to mix and form the mixture.
  5. Set the bowl aside.
  6. In a small bowl cook a sugar syrup from the precisely measured water and sugar.
  7. In another bowl measure 37.5 g egg whites.
  8. Once the syrup temperature reaches 114 degrees, begin whipping the egg whites at medium speed.
  9. When the syrup temperature reaches 118 degrees, remove it from the heat.
  10. In a thin stream add the syrup to the egg whites, while continuing to whip them.
  11. Continue whipping until stiff peaks.
  12. In 3-4 additions add the whites to the almond paste.
  13. The mixing must be done very carefully and gently, with scooping circular movements.
  14. Finally add the coconut essence.
  15. When scooped and dripping, the mixture should flow gently and smoothly.
  16. Put the finished mixture into a piping bag with a round tip.
  17. Pipe the shells spaced apart on a baking-paper-lined tray.
  18. This batch should yield 46-50 shells with a diameter of 3.5-4 cm.
  19. Tap the tray with the shells on the counter 2-3 times to release the air.
  20. Leave them to form a "skin" at room temperature for 40-50 minutes.
  21. Heat the oven to 150 degrees.
  22. Bake the macarons for 10-11 minutes.
  23. Remove them from the oven, wait 1-2 minutes.
  24. Together with the paper, transfer them onto a rack to cool completely.
  25. Arrange the shells in an airtight container and keep in the fridge for a minimum of 8 hours.
  26. After that you can sandwich them with the cream and serve immediately.
