Ramen

A pork belly ramen inspired by Dragon Ball Super, with miso broth, mushrooms, sweet corn and slices of slow-cured, seared pork belly over noodles.

Ingredients

1 kilogramPork belly
1Onion
1Garlic head
To tasteGinger
1Leek
300 millilitersSoybean sauce
1 glassSweet white wine
100 gramsBrown sugar
1 scoopMiso paste
To tasteMushrooms
3 individual packetsNoodles
To tasteSweet corn

Instructions

  1. Twist the pork belly, creating a cylinder. Tie the cylinder with kitchen twine. Place in a pot of water over medium heat. Cook for 15 minutes.
  2. In a bowl, add 250 milliliters of soya sauce, add 1 piece of chopped ginger, 1 head of peeled garlic, 1 large piece of leek and 1 onion cut into cubes. Add 1 glass of sweet white wine, 1/2 liter of water, brown sugar, and the cylinder of bacon. Close the bowl with plastic film and leave in the fridge for 12 hours to absorb all the flavor.
  3. Put the cylinder of bacon in a pan with some oil. Toast the entire outside of the pancetta well. When it is toasted all over the outside, add the ingredients from the bowl and cook for 15 or 20 minutes over medium heat. Important to close with a lid.
  4. Remove the cylinder of bacon and place it on an uncovered plate in the refrigerator for 12 hours. Strain the broth to remove any impurities and set aside.
  5. Remove the cooking lines from the cylinder of bacon. It will have hardened and can be handled without falling apart. Slice the bacon 1 cm thick.
  6. Mix miso paste with water in a pot and boil together with leek pieces and mushrooms for 3 or 4 minutes. Remove the vegetables and slowly add the mixture to the reserved stock.
  7. Cook the noodles in boiling water as directed by the manufacturer. At the same time, fry the bacon slices in a frying pan over medium heat for 2 or 3 minutes.
  8. In a bowl, place the drained noodles, add the resulting boiling broth, add the mushrooms, sweet corn, the leek pieces and the slices of bacon.
