Raspberry Bird's Milk Slices with Chia

A light, vegan two-layer set dessert of raspberry and white (coconut-chia) layers thickened with agar, inspired by Polish raspberry "bird's milk" (ptasie mleczko).

Ingredients

100 mlvegetable milk (raspberry part)
300 gfresh raspberries, blended smooth (can be frozen)
3 tbsp45 mlxylitol
1 tbsp15 mlvanilla extract / vanilla paste / vanilla beans
2 tsp10 mlagar (raspberry part)
1 can (400) gcoconut milk (white part)
100 mlvegetable milk (white part)
4 tbsp60 mlchia seeds
1 tbsp15 mlmaple syrup (non-vegan may use honey)
3 tbsp45 mlxylitol (white part)
1 tbsp15 mlvanilla paste
1 1/2 tsp7.5 mlagar (white part)

Instructions

  1. We need two pots - one for raspberry, the other for white. In each of them put all the ingredients except agar. Warm them up at the same time and mix well with a whisk. When the mass is boiled, add agar and mix thoroughly. Cook about 5 minutes on very low fire.
  2. Line a plate (20x20cm) with baking paper or food foil. At the bottom of it pour 1/2 of the raspberry pulp. Put in the fridge for about 5 minutes.
  3. When the mass is slightly thick, lay out the white part. Put it back in the fridge, but this time for 10-15 min. During this time reheat the rest of the raspberry mass. Do not worry, it's enough to reheat and mix thoroughly (if possible add 1 teaspoon of milk if the mass is too strong to evaporate).
  4. When the weight is slightly split, pour the remaining raspberry on it.
  5. Cover with aluminum foil or food foil and put it in the fridge for about 3 hours. After that time cut the concentrated mass into small pieces and enjoy their extraordinary lightness :) Bon Appetit!
  • If you like very sweet desserts add about 1 tablespoon of xylitol more.
