Raspberry Mousse
A raspberry mousse made with red wine, sour cream and whipped cream, set in the refrigerator.

Ingredients
| 400 g | raspberries (fresh or frozen) |
| 300 g | sour cream |
| 200 ml | liquid cream, unsweetened |
| 100 ml | red wine |
| 100 g | powdered sugar |
| 2 sachets | gelatin |

Prep 20 min · Cook 20 min · Total 40 min · Serves 7-8
- Sprinkle the raspberries with the sugar and, together with the wine, place them in a pot on the stove to boil. Once they have boiled and softened, remove and puree.
- Strain the mixture through a metal sieve and dissolve the pre-soaked gelatin into the still-hot syrup. Stir until dissolved and place in a bowl of iced water to cool, stirring again.
- Into the cooled raspberry mixture, stir the sour cream until the cream is homogenized.
- Finally add the whipped liquid cream.
- Pour the prepared raspberry mousse into dessert cups or bowls and place in the refrigerator for a few hours to set.
