Red Cranberry Sauce
A tart red-berry sauce simmered with red wine and cinnamon, thickened with potato starch. Excellent served with roast turkey, hen, chicken or game meats.

Ingredients
| 500 g | red cranberries |
| 250 g | sugar |
| 10 g | potato starch |
| 0.1 g | cinnamon |
| 100 g | red wine |
| 1 kg | water |
Instructions
- Cover the cleaned and washed red cranberries with cold water and bring to a boil, cooking until softened.
- Drain off their cooking liquid and pass the berries through a sieve. Thin the resulting puree with the reserved cooking liquid, then add the red wine, sugar and cinnamon.
- Bring the mixture to a boil for 5-7 minutes. Add the potato starch dissolved in a little water and boil the sauce, stirring constantly.
- Serve this red cranberry sauce with roast turkey, hen, chicken, game, or dishes made from wild-animal meat.
