Red Pork Stew

Ingredients

4 teaspoon20 mlolive oil
2 kgpork shoulder, cut into 2.5 cm pieces (I used pork tenderloin)
1.33large onion, finely chopped
0.67 cup160 mlsweet red paprika (I used pepper puree)
2.75 teaspoon14 mlsalt
2.67whole dried chipotle chile
1bay leaf
2.67chopped red bell pepper
4garlic cloves
small can tomato paste
a splash of Worcestershire sauce
water, enough to cover the ingredients
2 tablespoon30 mldry bouillon
4 teaspoon20 mlcornstarch
4 teaspoon20 mlwater

Instructions

  1. Select Sauté mode on Normal on pressure cooker; add oil and pork to inner steel pot and let brown on at least 1 side without stirring, about 5 minutes. Add onion, water, paprika, salt, chipotle chiles, and bay leaf; mix well.
  2. Lock pressure cooker lid in place and set steam vent to Sealing. Select Meat/Stew and cook for 8 minutes on High Pressure. Let pressure release naturally for 10 minutes, then set steam vent handle to Venting to quick-release remaining pressure.
  3. Remove chipotle chiles and bay leaf. Discard the bay leaf. Remove stems and seeds from chipotle chiles.
  4. Remove 1 cup cooking liquid from the pressure cooker; pour into a blender. Add chipotle chiles, red bell peppers, garlic, cornstarch, and water; blend until smooth.
  5. Pour blended mixture into the stew and mix well.

Mealthy Tip: In this recipe, paprika is far more than a dusting of color on top for garnish. Here sweet paprika adds its full flavor to the rich red sauce. Although paprika is strongly associated with Hungarian cuisine, the chili peppers used to make paprika originated in the Americas.
