Rootitoot Bacon and Tomato Soup
From The Rootitoot Cookbook, A Grandma's Recipes for Your Instant Pot. I love toasted bacon and tomato sandwiches. I mean I LOVE them. So I thought, why stop at sandwiches?
Ingredients
| 1 lb | 455 g | bacon, cut in 1" pieces |
| 1.5 cup | 360 ml | onion, chopped |
| 3 clove | garlic, very finely chopped | |
| 2 can | whole or diced tomatoes, juice and all (28 oz cans) | |
| 2 cup | 480 ml | chicken broth or water |
| 1 tbsp | 15 ml | sugar (optional, but it really bumps up the flavour) |
| 1 tsp | 5 ml | dried basil (or 2 tsp fresh), optional |
| 0.5 tsp | 2.5 ml | dried thyme (or 1 tsp fresh), optional |
| 1 tsp | 5 ml | salt |
| 1 tsp | 5 ml | pepper |
| 0.5 cup | 120 ml | heavy cream (optional) |
| — | crispy croutons, for garnish |

I love toasted bacon and tomato sandwiches. I mean I LOVE them. So I thought, why stop at sandwiches?
- Hit Sauté and when the display says Hot, add the bacon and sauté until almost crisp. Scoop it onto a plate and get rid of all but about a tablespoon of the bacon fat.
- Add onions to the pot and sauté for 2 or 3 minutes until softened and then add garlic for half a minute or until fragrant. Press Cancel.
- Add the bacon (all but a couple of tablespoons for garnish) and all other ingredients except the cream. Use a spoon or spatula to scrape any brown bits off the bottom to prevent the Burn warning.
- Close the lid and make sure the valve on the top is set to Sealing. Push the Pressure Cook (or Manual) button. Adjust time using the + and - buttons to get to 8 minutes. When it beeps that it's done, flip the valve from Sealing to Venting for a QR (quick release).
- Optional: use an immersion blender (or a regular blender) to puree the soup as coarse or as smooth as you like. Stir in the cream, if using it, and taste and add more salt and pepper if desired. Serve with some of the reserved bacon bits and toasty croutons on top.
