BackRose, Saffron and Pandan Panna Cotta

Rose, Saffron and Pandan Panna Cotta

A three-layered panna cotta flavored with rose, saffron and pandan. Serves 4.

Ingredients

400 mlconfectioner's cream
200 mlfresh milk
2-3 tbsp30–45 mlsugar, honey or another sweetener
2 tbsp30 mlrose water
6-7saffron threads
2 tbsp30 mlhot milk
3 tsp15 mlpowdered gelatin
1-2 dropspandan essence (koepoe koepoe brand)
hot water
a fewsaffron threads (for topping)
1 tbsp15 mlpeanuts (for topping)
a fewedible rose petals (for topping)

Instructions

Serves 4.

  1. Soak the saffron in the hot milk for 20-30 minutes.
  2. Add one cup of milk and the cream to a saucepan.
  3. Soak 3 teaspoons (of gelatin) in cold water for about 10 minutes.
  4. Heat over medium heat on the stove until the mixture is warmed through.
  5. Add the gelatin to the hot milk and cream mixture.
  6. Add the honey and stir well. Remove from the heat.
  7. Divide into 3.
  8. Into one, pour the saffron.
  9. Into the second, pour the rose syrup.
  10. Into the third, pour the pandan.
  11. Take 4 glass bowls or cups.
  12. Pour into each up to 1/3 with one of the colored mixtures.
  13. Place in the freezer for about 15 minutes for the first layer.
  14. Meanwhile, keep the remaining liquids warm in a water bath.
  15. Take the cups out of the freezer and add the second layer, pouring over the back of a tilted spoon so as not to disturb the first layer.
  16. Return the cups to the freezer for another 15 minutes.
  17. Pour in the remainder, which until now has been sitting in the warm bath.
  18. After the last layer, leave the panna cotta in the refrigerator.
