Roti Jala (Malaysian Net Pancakes)

Ingredients

125 gflour (preferably rice flour)
½ tsp2.5 mlsalt
½ tsp2.5 mlred pepper (paprika) powder or saffron
1egg, beaten
220 mlwater
100 mlcoconut milk
1 tbsp15 mlsunflower oil

Instructions

To 125 g of flour (preferably rice flour) with half a teaspoon of salt and half a teaspoon of red pepper (paprika) powder or saffron, add 1 beaten egg and 220 ml of water. While continuing to stir, add 100 ml of coconut milk and 1 tablespoon of sunflower oil. Grease a flat pan with a little fat and pour a thin stream of the mixture through a small opening, drawing a "rosette" or spiral (you can pour the pancake liquid into a plastic bag and cut a tiny opening in one corner). Malaysians have special little kettles with many small spouts for this job. The heat must be very low and, once the pancake starts to come away, do not flip it — instead fold it and roll it into a short roll. These pancakes are dipped into the curry.
