Sainte Maure de Touraine Goat Cheese Mille-feuille with Fig Compote
The Cuisine of Tours. Difficulty: Easy. Total time: 15 to 30 minutes; prep time: 10 minutes; cooking time: 20 minutes.
Ingredients

| 1 Tbsp | 15 ml | honey |
| 100 ml | water | |
| 20 g | butter | |

| 250 g | Sainte Maure de Touraine goat's cheese, sliced | |
| 80 g | fromage blanc | |
| 2 | egg whites | |
| 2 Tbsp | 30 ml | fresh herbs, finely chopped and mixed |
Instructions
- In a saucepan, slowly cook the minced onion until soft.
- Add the coarsely chopped figs, honey and water; cook over low heat for 15 minutes to form a compote.
- Combine the fromage blanc, egg whites, herbs and pepper into a smooth mixture.
- To make the tuiles, spread the fromage blanc mixture in small discs on a parchment-lined baking sheet.
- Bake for 5 minutes in a preheated 200 C / 400 F oven; cool.
- Assemble the mille-feuilles by alternating slices of goat's cheese with the herb tuiles and fig compote.
