
Scallops Rice
Who knew you can cook scallops and meat in a rice cooker? This hearty, one-pot Scallops Rice recipe is great for quick meals. Fresh scallops, juicy prawns and tender pork belly layered on top of umami-rich rice - they all come together nicely just using a rice cooker.

Ingredients

| 8 pcs | Prawns | |
| 90 g | Pork belly (cut into bite sizes) | |
| 8 pcs | Fresh scallops | |
| 1 tbsp | 15 ml | Fragrant oil |
| 2 tbsp | 30 ml | Minced shallots |
| 2 tbsp | 30 ml | Minced garlic |
| for garnish | Scallions (garnishing) | |
| 1 tbsp | 15 ml | Oyster sauce (sauce mixture) |
| 1 tbsp | 15 ml | Light soy sauce (sauce mixture) |
| 1.5 tbsp | 23 ml | Cooking wine (sauce mixture) |
| 0.5 tbsp | 7.5 ml | Sugar (sauce mixture) |
| to taste | Pepper (sauce mixture) |
Instructions
Scallops Rice Recipe in a Rice Cooker - 电饭锅扇贝饭
- Wash and drain dry rice grains. Transfer to the rice cooker.
- Shallow fry shallots and garlic until fragrant and crisps. Filter out and reserve oil for later use.
- In a mixing bowl, mix soy sauce, oyster sauce, sugar, cooking wine and pepper. Drizzle a bit of fragrant oil rendered from the shallots and garlic. Mix well and set aside.
- During the last 10 minutes of cooking, add in pork belly, prawns and scallops. Pour sauce mixture over ingredients, cover and leave to cook until the rice cooker beeps.
- Fluff rice and scope out rice.
- Garnish with fried shallots and garlic. Top off with scallions.
