
Sesame Ginger Beef
In this savory and slightly sweet stir-fry, mushrooms add an umami flavor while fresh green beans provide some color and crunch. 30 minutes or less.

Ingredients
| 1 pound | 455 g | sirloin strip steak, thinly sliced |
| 4 tablespoons | 60 ml | cornstarch, divided |
| 2 tablespoons | 30 ml | rice wine |
| 2 tablespoons | 30 ml | vegetable oil |
| 3 tablespoons | 45 ml | fresh ginger, crushed and chopped |
| 2 | garlic cloves, crushed and chopped | |
| 8 ounces | 225 g | green beans |
| 4 ounces | 115 g | white mushrooms, sliced |
| 1 | red bell pepper, diced into 1/2-inch pieces | |
| 1/4 cup | 60 ml | soy sauce |
| 2 tablespoons | 30 ml | sugar |
| 1 tablespoon | 15 ml | rice vinegar |
| 1 tablespoon | 15 ml | toasted or hot sesame oil |
| 1 bunch (6 to 8) | scallions, cut into 1/2-inch pieces | |
| 1 teaspoon | 5 ml | sesame seeds |

Instructions
- Seal the steak, 3 tablespoons of cornstarch, and rice wine in a large zip-top bag. Massage for 2 minutes.
- In a wok or large cast iron skillet, heat the vegetable oil over high heat until it shimmers. Add the ginger and garlic and stir-fry for about 1 minute, until lightly browned.
- Add the green beans and stir-fry for 1 minute. Add the marinated steak and stir-fry for 1 minute. Add the mushrooms and stir-fry for 1 minute. Add the bell pepper and stir-fry for 1 minute.
- In a medium bowl, whisk together the soy sauce, sugar, vinegar, sesame oil, and the remaining 1 tablespoon of cornstarch. Add the sauce to the wok and cook for about 2 minutes, until a glaze forms.
- Garnish with the scallions and sesame seeds and serve over steamed rice. Substitution tip: Try substituting ground pork or sliced chicken in this recipe.
