Shrimp and Shiitake Mushroom Fried Rice

A quick one-dish fried rice with shrimp, shiitake mushrooms and soy sauce. Fried rice is Chinese in origin; attributed to China though the dish carries pan-Asian touches.

Ingredients

2 tablespoons30 mlOil, for sautéing
5Garlic cloves, minced
2 tablespoons30 mlOnion, chopped
1 teaspoon5 mlGinger, minced
8-10Medium peeled shrimp
5 piecesFresh shiitake mushrooms, chopped
2 cups480 mlCooked rice
1 teaspoon5 mlSalt
1/2 teaspoon2.5 mlPepper
2 tablespoons30 mlSoy sauce
1 teaspoon5 mlInstant chicken-flavored broth powder
3 tablespoons45 mlPeas
1Large red chili, seeded and finely sliced

Instructions

  1. Heat the oil and sauté the garlic, onion and ginger until fragrant.
  2. Add the shrimp and mushrooms and stir until the shrimp change color.
  3. Add the cooked rice, then the salt, pepper, soy sauce and chicken-flavored broth powder. Mix well until evenly combined.
  4. Add the peas and red chili and cook briefly. Remove from heat.
  5. Serve hot, sprinkled with fried onions and scrambled eggs.
