Smoked Chicken in a Banana Leaf

Ingredients

2fresh red hot chili pepper, chopped (marinade)
0.25 cup60 mllime juice (marinade)
2 Tbsp30 mlolive oil (marinade)
0.5 tsp2.5 mlcayenne pepper (marinade)
2 tsp10 mlminced garlic (marinade)
1 tsp5 mlpaprika (marinade)
1 tsp5 mlsalt (marinade)
1 tsp5 mldried oregano (marinade)
2lime leaf, finely chopped (marinade)
0.25 cup60 mlchicken stock (marinade)
0.25 cup60 mlcoconut milk (marinade)
1smoked chicken (about 1 1/2 lbs), meat removed from the bones and shredded
2 Tbsp30 mlolive oil (plantain)
1large plantain, peeled and sliced on the diagonal, 1/2-inch thick
1 Tbsp15 mlsugar (plantain)
4banana leaves (assembly)
4sprigs fresh coriander (assembly)

Instructions

Marinade

  1. Combine the marinade ingredients in a food processor and blend into a smooth paste.
  2. Put the chicken in a non-reactive bowl and rub the marinade all over.
  3. Cover and refrigerate overnight. Chicken / Plantain
  4. The next day, remove chicken from the refrigerator and bring to room temperature.
  5. Meanwhile, heat the olive oil in a medium nonstick saucepan.
  6. Sprinkle the plantain with sugar and fry until golden and softened, about 2 minutes per side.
  7. Remove from the heat and set aside. Assembly
  8. Heat a grill on medium-high heat.
  9. Divide the chicken among the banana leaves.
  10. Top with the plantains and the coriander sprigs.
  11. Tie the banana leaves with kitchen twine, or a banana leaf torn into strips.
  12. Put the packages on the top shelf of the barbecue for 15 to 20 minutes, or until chicken is hot.
