
Somen Noodle with Ginger Garlic Sesame Soy Sauce
A quick chilled Japanese somen noodle dish tossed in a punchy ginger, garlic, sesame and soy dressing.
Ingredients
| 150 g | dried somen noodles | |
| 1 clove | garlic, grated | |
| 1 tsp | 5 ml | grated fresh ginger |
| 1/2 tsp | 2.5 ml | chili flakes |
| 1/4 cup | 60 ml | soy sauce |
| 2 tbsp | 30 ml | mirin |
| 1 tbsp | 15 ml | sesame oil |
| — | sliced scallions and sesame seeds, to garnish |
Instructions
- Cook the somen noodles according to the package instructions. Drain and place in a bowl; set aside.
- Combine all sauce ingredients (garlic, ginger, chili flakes, soy sauce, mirin and sesame oil) in a small bowl, pour over the cooked somen and mix well.
- Garnish with sliced scallions and sesame seeds.
