Chinese soup dumplings (xiaolongbao) with a pork filling and a gelatinized stock that melts into hot broth as they steam.

Ingredients

2 cups480 mlAll-purpose flour
1/2 cup120 mlBoiling water
1/4 cup60 mlCold water
1 lb455 gGround pork
1/4 cup60 mlChicken stock (for filling)
2 tbsp30 mlSoy sauce
1 tbsp15 mlRice wine
1 tsp5 mlGinger, minced
1/2 tsp2.5 mlSesame oil
1/4 tsp1.3 mlWhite pepper
1 tsp5 mlSugar
2 tbsp30 mlGreen onions, chopped
1 1/2 cups360 mlChicken stock (for gelatinized stock)
1 tsp5 mlGelatin powder

Instructions

  1. Add chicken stock into the saucepan and bring to a simmer.
  2. Dissolve the gelatin powder in the cold stock and add it to the hot stock. Let it cool and put it into the refrigerator.
  3. Combine the flour with boiling water into the big bowl and mix well.
  4. Add the cold water and knead for 5-10 minutes. Cover the dough and let it rest for 30 minutes.
  5. Meanwhile, add the ground pork, soy sauce, rice wine, sesame oil, minced ginger, white pepper, and sugar into the bowl. Mix well.
  6. Chop the gelatinized stock into small pieces and add to the filling mixture. Roll the dough into a long log and cut it into small pieces. Roll each piece into a small circle.
  7. Place a tbsp of filling in the center of each dough circle. Carefully pleat the edges to seal the dumpling, pinching the top to form a "pouch."
  8. Line a bamboo steamer with parchment paper.
  9. Steam the dumplings over boiling water for 8-10 minutes.
  10. Serve!
