
Pork Chops, Carrots, and Romesco

Preheat Joule to 144 °F / 62 °C. ChefSteps cooks sous vide with Joule, a WiFi-connected device you control with your smartphone.

Season: Sprinkle chops generously with salt and pepper. (Hint: Pork loves salt.) If you have a favorite rub, you can add that too.

Cook: Transfer chops to a ziplock-style bag and add a generous amount of oil. For even more flavor, add seasonings to the bagāfresh herbs, crushed garlic cloves, or whatever your heart desires. Cook for 60 minutes.

Make your sides: We like to pair our pork chops with some bright apple purƩe and a brussels sprouts slaw, but you can mix and match any of our simple purƩes and salads for weeknight perfection.

Finish: When chops have cooked, remove from bag and dry all surfaces lightly with a paper towel. Meanwhile, bring pan back up to high heat and add enough oil or butter to coat. Transfer chops to pan and quickly sear on both sides until golden, about two minutes per side. Serve immediately.
