Steps:
- Prepare the onion by discarding the outer skin. Divide into 3 even sections and finely dice one section. Set to the side.
- Separate the avocado from the shell and section into 3 pieces. Chop one section finely and set aside.
- Utilize a pair of gloves to slice the jalapeno pepper open. Discard the seeds.
- Divide the pepper into 3 parts and roughly chop one section. Set to the side.
- Select the setting of Sauté on the Instant Pot and combine the olive oil, jalapeno, garlic, and onion. Fry for approximately 3 minutes.
- Blend the corn, tomatoes and black beans into the pot. Evenly distribute the salt, chili powder, smoked paprika, cumin, and black pepper.
- Add the quinoa and water into the pot and toss to integrate completely.
- Close the valve by moving to Sealing.
- Adjust to the mode of Pressure Cooking on the highest pressure setting for the duration of 60 seconds.
- Wait about 10 minutes for the pressure to naturally dissipate and flip the valve to Venting to expel the pressure completely.
- Blend the avocados, lime juice, and cilantro and enjoy immediately.
Variation Tips:
- Feel free to substitute crushed tomatoes in place of the fire roasted tomatoes.
- Some Instant Pots have the issue with the Burn message popping up. If this is the case with your particular unit, add in the tomatoes at the very end with the quinoa and do not toss.
