
Soy Sauce Chicken Rice

Ingredients

| 1 tsp | 5 ml | 5 spice powder |
| 2 tbsp | 30 ml | Cooking oil |
| 1 bulb | Garlic | |

| 400 g | Rice | |
| 450 g | Chicken stock | |
| 5 stalks | Spring onion (dipping sauce) | |
| 20 g | Ginger (grated, dipping sauce) | |
| 1 tsp | 5 ml | Sugar (dipping sauce) |
| 1 tsp | 5 ml | Salt (dipping sauce) |
| 30 g | Cooking oil (dipping sauce) |
Instructions
We made this Soy Sauce Chicken Rice with just a rice cooker! If you're looking for a recipe that's low-effort but makes it seem like you've been in the kitchen all day, then this is the recipe for you! All you need to do is marinate some chicken with a variety of sauces and aromatics, then simply place them over the rice and let your trusty rice cooker do all the cooking for you. The chicken and rice is cooked at the same time, and the rice soaks up the delicious ginger and garlic flavours from the chicken – making it super yummy and flavourful. In just under an hour, you'll have a week's worth of meals that just needs to be popped in the microwave!
- In a mixing bowl, add all ingredients under the marinade and mix evenly. Cling wrap and leave to marinate for at least 2 hours to overnight.
- In a small pan over medium heat, add in garlic and ginger and stir fry until fragrant. Add washed rice into the rice cooker. Add in aromatics and chicken stock.
- Set the rice to cook. At the 20 minute mark, add in chicken pieces and cook for another 20 minutes or until chicken is cooked through.
- Meanwhile, strain the marinade into a saucepan and add 200ml of water. Bring to a boil and reduce until sauce is slightly thick and silky.
- Finely slice spring onion, grate ginger, and add into a heat-proof bowl. Heat cooking oil until smoking and pour over aromats. Mix well.
- Once ready, remove chicken pieces and chop chicken thighs.
- Remove aromats from rice.
- To serve immediately: Plate rice, 1 chicken thigh, spring onion sauce on the side, and thickened sauce over chicken and rice.
- To meal prep: Add rice into a tupperware, chicken thigh, and spring onion sauce on the side. Drizzle sauce over chicken before serving.
