Spam Musubi Japanese Style
Pan-seared spam glazed in soy and mirin, pressed onto rice and wrapped in nori — Hawaii met Japan and this was the result. (Hawaiian-Japanese fusion; presented here in the book's Japanese section.)
Ingredients
| 1 12 oz (340g) | can spam, cut into 8 slices | |
| 2 tablespoons | 30 ml | soy sauce |
| 2 tablespoons | 30 ml | mirin |
| 1 tablespoon | 15 ml | sugar |
| 2 cups (370g) | cooked short-grain rice, seasoned with a pinch of salt and a splash of rice vinegar | |
| 4 | nori sheets, cut into strips about 2 inches (5cm) wide | |
| — | furikake to sprinkle (optional) |
Instructions
- Mix soy sauce, mirin, and sugar in a small bowl. 2. Pan-fry spam slices in a dry skillet over medium-high heat for 2 minutes per side until caramelized. 3. Add the soy-mirin glaze and cook, turning, until the spam is coated and glossy. 4. Press about 1/3 cup (75g) of rice into a rectangular mold or the empty spam can. Top with a slice of glazed spam. 5. Wrap a nori strip snugly around the rice and spam, pressing the end to seal. 6. Sprinkle with furikake if using. Serve immediately or wrap in plastic for later.
