Spinach Pancakes with Creamy Banana Sauce
Green blender pancakes made with spinach, banana and blueberries, served with a creamy banana-yogurt sauce.

Ingredients
| 1 cup | 240 ml | raw spinach |
| 1 | banana | |
| 1/2 cup | 120 ml | blueberries |
| 1 cup | 240 ml | soy milk |
| 1 tbsp | 15 ml | maple syrup |
| 1 | egg | |
| 1¼ cup | 300 ml | whole-wheat flour |
| 2 tsp | 10 ml | baking powder |
| 1/2 tsp | 2.5 ml | salt |
| 1/2 tsp | 2.5 ml | cinnamon |
| 1 | banana, mashed | |
| 170 g | vanilla low-fat yogurt | |
| 1/8 cup | 30 ml | soy milk |
Instructions
Makes 12 pancakes.
- Put the spinach, blueberries, banana, soy milk and maple syrup in a blender and blend. Once you have a smooth mixture, pour it into a large bowl and add the egg. In another bowl, mix the remaining ingredients. Combine the two mixtures and stir until you get a smooth batter.
- To make the banana sauce, blend the mashed banana, soy milk and yogurt until smooth.
- Heat a nonstick pan over medium-high heat. Pour a portion for one pancake and cook for 2 minutes on each side. Drizzle the pancakes with banana sauce and serve warm.
