Stuffed Turkey Burger with Gorgonzola and Spinach

Ingredients

2 pounds905 gground turkey
1red bell pepper, diced
1yellow bell pepper, diced
0.5 cup120 mlGreek yogurt
0.25 cup60 mlground oats
0.25 cup60 mlchopped parsley
1 tablespoon15 mlsoy sauce
2 teaspoons10 mlsalt
2 teaspoons10 mlground black pepper
1 teaspoon5 mlpaprika
1 teaspoon5 mlturmeric
1 teaspoon5 mlgarlic powder
4 ounces115 gcrumbled gorgonzola cheese
0.25 cup60 mlgrated Parmesan cheese
0.25 cup60 mlmozzarella cheese
0.5 cup120 mlsautéed spinach

Instructions

For best results, use a frying pan.

  1. Combine ground turkey, red bell pepper, yellow bell pepper, Greek yogurt, oats, parsley, soy sauce, salt, pepper, paprika, turmeric, and garlic powder in a large bowl, mixing well with your hands; form into 6 patties.
  2. Mix Gorgonzola cheese, Parmesan cheese, mozzarella cheese, and spinach together in a separate bowl; roll into quarter-sized balls.
  3. Put a cheese ball in the center of a patty, fold patty in half, and gently roll and flatten again into a patty with the cheese mixture in the center; repeat with remaining patties and cheese mixture.
  4. Place patties onto a sheet pan and chill in freezer for 10 minutes.
  5. Heat olive oil in a non-stick skillet over medium-high heat. Cook patties in skillet until the cheese is melted and turkey is no longer pink, about 7 minutes per side. A thermometer inserted into the center of each patty should read at least 165°F (75°C).

Tip: For a lighter bun option, serve stuffed turkey burgers in pita bread.
