
SunGold Kiwi Panna Cotta
Ingredients
| 480 ml | cream | |
| 3 tbsp | 45 ml | sugar |
| 1 tsp | 5 ml | vanilla extract |
| 1 packet | gelatin | |
| 3 tbsp | 45 ml | cold water |
| 5-6 | kiwifruit, cubed | |
| 1-2 tbsp | 15–30 ml | sugar to sweeten the kiwi to taste |
| 1 tbsp | 15 ml | cornstarch |
| 1/3 cup | 80 ml | water |
Instructions
To make Panna Cotta:
- In a small bowl, dissolve the gelatin in the 3 tablespoons of cold water. Let it swell for 5 minutes.
- In a small saucepan, heat the cream and sugar without letting it boil.
- Pull it off the stove and pour the gelatin in.
- Pour in the vanilla and keep stirring until the gelatin dissolves.
- Strain through a sieve into a large bowl.
- Divide into 8 glasses.
- Cover with cling film and leave in the refrigerator for 6 hours or overnight.
To prepare the coulis: 8. Peel and finely chop the kiwifruit. 9. Put in a saucepan and sprinkle with the sugar. 10. In a small bowl, mix the cornstarch and water. 11. Pour over the kiwi and cook over medium heat until it starts to bubble and thickens. (I'm thinking of adding a little gelatin too.) 12. Cool completely and pour over the panna cotta.
Additional kiwi sliced for decorating.
