Sweet Banitsa with Turkish Delight and Walnuts

A traditional Bulgarian recipe from chef Shishkov. In traditional Bulgarian cuisine sweets have a modest presence. Sweetness was mostly enjoyed from naturally sweet foods such as honey and fruit (usually eaten dried). A recipe like this one inherits the traditions of Bulgarians and of various other settlers in our lands, showing how much the Bulgarian and other national cuisines intertwine.

Ingredients

2 packetsfine filo banitsa pastry sheets
300 gwalnuts
200 gTurkish delight (lokum)
200 mlwater
200 gsugar
100 mloil
icing sugar, for dusting

Instructions

  1. Spread out the pastry sheets three at a time, one on top of the other, brush them with oil and place on top the Turkish delight, cut in advance into cubes, and the crushed walnuts, which you have already toasted in a dry pan. Roll up and arrange in a round greased tray. Repeat until the tray is full. Bake in an oven preheated to 180°C for 20 minutes.
  2. Meanwhile, heat the water and the sugar, letting the liquid thicken sufficiently. Pour the resulting sugar syrup over the hot banitsa and leave it to cool. When serving, dust with icing sugar.
