Tabasco Sauce
A homemade hot sauce from Tabasco or other red chili peppers, used with seafood soups, sauces, salads, mayonnaises and starters.

Ingredients
| 36 Tabasco chilies or other red hot peppers | hot peppers | |
| 1 clove | garlic | |
| 1 tbsp | 15 ml | sugar |
| 1/2 tsp | salt | |
| 1 tsp | 5 ml | horseradish |
| 1 cup | 240 ml | hot vinegar |
| 1 cup | 240 ml | water |
Instructions
- Clean the stems off the peppers. Add the water to the peppers and garlic and put them to boil in a pot on the stove.
- Once softened, press them through a fine sieve. Return to the pot and place on the stove to simmer with all the remaining ingredients.
- Once you get a thicker, homogeneous sauce, remove it from the heat and transfer it to a clean warm jar, which should be closed with a lid.
- Use Tabasco sauce as an addition to seafood soups, sauces, salads, mayonnaises, starters, etc.
