Tamago Kake Gohan (Japanese Egg Over Rice)

A classic Japanese breakfast of hot rice topped with a raw egg beaten in with soy sauce. Difficulty: beginner. Contains raw egg — use only pasteurised eggs if concerned about safety.

Ingredients

200 ghot cooked Japanese short-grain rice
1very fresh egg (preferably pasteurised)
1 tsp5 mlsoy sauce (or tamari for gluten-free)
1/2 tsp2.5 mlmirin, optional
toasted sesame seeds or nori strips, for garnish

Instructions

  1. Place the hot cooked rice in a bowl and make a small well in the centre.
  2. Crack the raw egg directly into the well. Add the soy sauce and mirin (if using).
  3. Mix vigorously with chopsticks or a fork until the egg is frothy and fully incorporated into the rice — the heat of the rice will slightly cook the egg.
  4. Garnish with sesame seeds or nori and eat immediately.

Chef's tip: For a richer taste, separate the yolk and white — mix the white in first, then place the whole yolk on top.
