Tamago Kake Gohan (Japanese Egg Over Rice)
A classic Japanese breakfast of hot rice topped with a raw egg beaten in with soy sauce. Difficulty: beginner. Contains raw egg — use only pasteurised eggs if concerned about safety.

| 200 g | hot cooked Japanese short-grain rice | |
| 1 | very fresh egg (preferably pasteurised) | |
| 1 tsp | 5 ml | soy sauce (or tamari for gluten-free) |
| 1/2 tsp | 2.5 ml | mirin, optional |
| — | toasted sesame seeds or nori strips, for garnish |
Instructions
- Place the hot cooked rice in a bowl and make a small well in the centre.
- Crack the raw egg directly into the well. Add the soy sauce and mirin (if using).
- Mix vigorously with chopsticks or a fork until the egg is frothy and fully incorporated into the rice — the heat of the rice will slightly cook the egg.
- Garnish with sesame seeds or nori and eat immediately.
Chef's tip: For a richer taste, separate the yolk and white — mix the white in first, then place the whole yolk on top.
