Instructions
- First, prepare the marinade for the potatoes. Take curd in a big bowl. Add chickpea flour (besan), garam masala, salt, coriander and cumin powder, turmeric powder and red chili powder. Mix it very well.
- Add the potatoes, mix well and let it rest for at least an hour.
- Heat oil in a pan, add cumin seeds and let them splutter. Add the crushed garlic and cook for a few seconds.
- Add the marinated potatoes and cook for 5 to 7 minutes over medium heat. Stir in between.
- Add chopped coriander / cilantro and mix very well.
- Your Tawa Aloo is ready. Enjoy with paratha, rice, roti or naan.
Resting time 1 hour.
Notes: Make sure your curd is not too sour. If it is sour, use 1 cup curd and 1 cup water. You can make this with regular potatoes too — cut them into bite-sized pieces. Adjust the gravy to your requirement by adding water. To make this no-onion no-garlic aloo ki sabzi, avoid the garlic.
