3 tbsp45 mlOil
1 and 1/2 tbspCrushed or grated garlic
1 tsp5 mlCumin seeds
1 tbsp15 mlBesan / chickpea flour
Chopped cilantro / coriander for garnishing

Instructions

  1. First, prepare the marinade for the potatoes. Take curd in a big bowl. Add chickpea flour (besan), garam masala, salt, coriander and cumin powder, turmeric powder and red chili powder. Mix it very well.
  2. Add the potatoes, mix well and let it rest for at least an hour.
  3. Heat oil in a pan, add cumin seeds and let them splutter. Add the crushed garlic and cook for a few seconds.
  4. Add the marinated potatoes and cook for 5 to 7 minutes over medium heat. Stir in between.
  5. Add chopped coriander / cilantro and mix very well.
  6. Your Tawa Aloo is ready. Enjoy with paratha, rice, roti or naan.

Resting time 1 hour.

Notes: Make sure your curd is not too sour. If it is sour, use 1 cup curd and 1 cup water. You can make this with regular potatoes too — cut them into bite-sized pieces. Adjust the gravy to your requirement by adding water. To make this no-onion no-garlic aloo ki sabzi, avoid the garlic.
