Although not shown here in our recipe photos, we think this dish would also be delicious with cheddar cheese on top! (We've listed that as an optional ingredient in the recipe below.) From afamilyfeast.com.

Ingredients

2 tbsp30 mlolive oil
1 cup240 mldiced onion
1 cup240 mldiced green bell pepper
1 tbsp15 mlminced fresh garlic
1 pound455 gground beef, 80/20
0.5 tsp2.5 mldry mustard
2 tsp10 mlchili powder
2 tsp10 mlkosher salt
0.25 tsp1.3 mlfreshly ground black pepper
0.5 cup120 mluncooked long grain white rice
2 tbsp30 mltomato paste
1 14.5-ounce cancanned diced tomatoes with juice
1 cup240 mlwater
1 tsp5 mlWorcestershire sauce
1 cup240 mlshredded cheddar cheese (optional)

Instructions

  1. In a skillet that has a tight fitting cover, heat olive oil over medium high.
  2. Add onion, peppers, garlic, ground beef, dry mustard, chili powder, salt and pepper. Sauté until ground beef is no longer pink, breaking up beef as you cook.
  3. Add rice and cook for two minutes letting rice absorb liquid.
  4. Add tomato paste and cook for one minute.
  5. Add canned tomatoes with juice, water and Worcestershire sauce.
  6. Stir, cover and simmer for 20 minutes covered. (Note: it can scorch; I prefer to cook it without the lid.)
  7. After 20 minutes, remove lid and fluff the mixture then serve. If the mixture is too wet, cook for another few minutes with lid off.
  8. If you are using the cheese, sprinkle on top for last few minutes of cooking time with lid on.
