
Tiramisu-style Strawberry Mousse
A light, jiggly strawberry mousse made with cream cheese and mascarpone, set with gelatin and optionally layered with sponge cake.
Ingredients
| 1 package | strawberries |
| 100 grams | cream cheese |
| 100 grams | mascarpone cheese |
| 70 grams | granulated sugar |
| 100 grams | heavy cream |
| 5 grams | gelatin |
| 30 ml | water |
Instructions
- Dissolve the gelatin in water and put over a hot water bath.
- Add hulled strawberries and 20 g of granulated sugar to a bowl and mash the berries. If you want to add lemon juice, add 1 - 2 teaspoons.
- Add cream cheese, mascarpone cheese, and 50 g of granulated sugar to a bowl and mix over a hot water bath until smooth.
- Add gelatin from Step 1 and the strawberries from Step 2 to the mixture from Step 3 and mix together.
- Put heavy cream into a bowl and whip until soft peaks form.
- To the mixture from Step 4, add the whipped heavy cream from Step 5 and mix.
- Pour into a mold and chill.
- Here it is after it set... fluffy and jiggly.
- Here I made these in heart-shaped molds with a bottom layer of sponge cake.
- I made the top layer of gelatin with mashed and strained strawberries and raspberries, added sugar, water, and gelatin and heated the mixture. After letting it cool, I poured it on top of the mousse.
- You can make this as a whole cake, too.
- This is also delicious if you add layers of sponge cake. You can adjust the amount of mousse and thickness of the layers.
