Ingredients

2 pounds905 gpork loin roast, cut into cubes
0.5 pound225 ggreen beans, cut into 1-inch pieces
2 tbsp30 mlfresh parsley leaves, roughly chopped
2carrots, cut into chunks
1 tsp5 mlpaprika
2celery ribs, cut into chunks
1 pound455 gpotatoes, cut into chunks
salt and ground black pepper, to taste
2tomatoes, pureed
2garlic cloves, chopped
1onion, chopped
2 cups480 mlchicken bone broth
2 tbsp30 mlsafflower oil

Instructions

  1. Press the "Sauté" button and heat the oil until sizzling. Once hot, cook the pork until it is no longer pink on all sides.
  2. Add the garlic and onion and cook for a minute or so, stirring frequently.
  3. Stir in the carrots, celery, potatoes, salt, black pepper, paprika, tomatoes, and chicken bone broth.
  4. Secure the lid. Choose the "Meat/Stew" mode and cook for 35 minutes at High pressure. Once cooking is complete, use a quick pressure release; carefully remove the lid.
  5. Add the green beans to the inner pot. Press the "Sauté" button again and let it simmer for a few minutes more. Serve in individual bowls garnished with fresh parsley.
