Turkish Tantuni

Tantuni is a type of meat durum (thin wrap) from the cuisine of the Turkish city of Mersin. The filling is prepared on a sac (saj) or in a wok from sauteed veal/beef or chicken, combined with spices and vegetables, then served in cut bread like a sandwich or in lavash, garnished with sumac onions and hot peppers.

Ingredients

300 gveal/beef entrecote (thinly sliced medallions)
1 pconion, medium
2 pcsmall tomatoes
2 pcmedium green peppers
2 tbsp30 mlolive oil (or cottonseed oil)
1/4 tsp1.3 mlsalt
1/4 tsp1.3 mlsumac
1/4 bunchparsley
1 tsp5 mlground red pepper (paprika)
1.5 cups360 mlwater
1 pcsmall white bread, halved (or 2 lavash)
1/2 pclemon
10 pcsmall marinated peppers

Instructions

From the cuisine of Mersin, Turkey. Invite the taste and aromas of Mersin into your home!

Preparation:

  1. Clean the meat of excess fat and cut it into small cubes. Pour enough cold water into a pot to cover it and boil until the water is absorbed.
  2. Heat the wok or the sac on the stove. Put 2 tablespoons olive oil (or cottonseed oil) in the pan and add the boiled meat.
  3. Add to the meat in portions: 1 cup of water mixed with 1 teaspoon of ground red pepper (paprika).
  4. Once the meat absorbs the water, cut the 2 green peppers (removing the seeds), add them to the pan and continue frying.
  5. Once the peppers are roasted, press the lavash or sandwich bread you will serve in onto the meat so it absorbs the oil.
  6. Add the 2 peeled and chopped tomatoes and continue cooking briefly, stirring.
  7. Distribute the cooked meat into the bread or lavash.
  8. Add the onion (mixed with sumac) and serve the tantuni, squeezing lemon over it if desired.
  9. When serving, add fresh chopped parsley and/or raw diced tomatoes.

Tips: The purpose of the water or broth added to the sac in portions during cooking is to control the temperature of the sac and to provide steam to soften the bread the tantuni will be wrapped in. You can use a wok instead of a sac. You can add ground red pepper to the hot oil. You can add the tomatoes raw at the end when serving.
