
Udon / Soba Broth
A light Japanese dashi-based noodle broth for udon or soba, finished with soy, mirin, fried tofu and green onion.
Ingredients
| 2 packets | Kayanoya Original Dashi Stock Powder | |
| 800 ml | water | |
| 1 1/2 tbsp | 23 ml | light soy sauce |
| 1 tbsp | 15 ml | mirin |
| 2 | abura-age (fried tofu) sheets | |
| 2 servings | udon noodles | |
| — | green onion, to taste |
Instructions
- Place the water and dashi powder in a saucepan and bring to a boil for 1-2 minutes, then add the soy sauce and mirin.
- Add the noodles, and when the liquid begins to boil again, pour the contents of the pan into a bowl.
- Top with roasted abura-age and chopped green onion.
