Umeboshi (Pickled Plum)
Japan's most beloved preserved food — tart, salty, and intensely concentrated. Making it at home is a seasonal ritual worth every step.
Ingredients
| 900 g | ripe yellow ume plums — must be fully ripe, not green |
| 140 g | non-iodized salt, approximately 25% of plum weight |
Instructions
- Gently wash the plums and dry each one carefully. Remove the small stem nub with a toothpick.
- In a sterilized ceramic crock, layer plums and salt alternately, ending with a salt layer.
- Place a drop lid or a plate directly on the plums, then add a weight equal to the weight of the plums. Cover loosely and leave at room temperature.
- Within 2–3 days, the plums will release liquid called umezu. Check that the liquid rises above the plums. If it does not cover the plums, add a small amount of additional brine: 1 cup (240ml) water with 1.5 oz (43g) salt.
- Leave for 1 month to fully salt-cure.
- After 1 month, sun-dry the plums for 3 days on a rack, turning daily, during a dry spell.
- Return to any remaining brine overnight.
- Store at room temperature — the flavor improves with age over months and years.
