
Pickled Plum Dashi Rice (Umeboshi Takikomi Gohan)
Japanese takikomi gohan: sushi rice cooked in dashi with pickled ume plums (umeboshi), mirin and soy sauce, then fluffed to break up any clumps.
Ingredients
| 2 cups | 480 ml | dry sushi rice |
| 2 Tbsp | 30 ml | mirin |
| ½ tsp | 2.5 ml | soy sauce |
| 2 cups | 480 ml | fish stock (dashi), enough to lightly cover the rice |
| — | pickled ume plums (in a shiso-leaf marinade) | |
| ½ tsp | 2.5 ml | salt |
Instructions
Cook the sushi rice with the dashi, mirin, soy sauce, salt and pickled ume plums in a rice cooker. Once done, stir the rice well so there are no clumps, then serve. (See the recipe video linked below.)
