
Veal Roll with Mozzarella

Ingredients
| 600 g | veal meat, fillet | |
| 125 g | mozzarella | |
| 500 g | veal mince | |
| 500 ml | red wine | |
| 200 g | onion | |
| 4 | tomatoes | |
| 75 g | mushrooms | |
| 1 | carrot | |
| — | celery, small heads | |
| 1 clove | garlic | |
| 4 tbsp | 60 ml | oil |
| 1 | bay leaf | |
| — | black pepper | |
| — | salt |
Instructions
- Cut the tenderloin into two pieces across the width, so that you get a rectangle, which you season with salt and black pepper. If you wish, you can make 2 smaller rolls.
- Finely chop the carrots, mushrooms, garlic and celery. Braise the vegetables in 2 tbsp oil. When they soften, add the mozzarella cut into cubes and the minced meat. Remove from the heat and season. Stir until you get a smooth mixture.
- Spread the mixture over the veal fillet. Roll it up into a roll, which you fix with toothpicks or strong string. Fry the roll on all sides in the remaining oil until browned.
- Place the roll in a deep dish, cover it with the finely chopped onion, the grated tomatoes and the bay leaf. Pour over the red wine and braise for about 60 minutes.
