Veal Roulades

Serve with boiled potatoes (dampfkartoffeln or parsley potatoes) or spaetzle noodles and red cabbage. Enjoy!

Ingredients

8quick-cook (à la minute) steaks
1 tbsp15 mlmustard
pickles
4ham
2leek (front onion)
4 tsp20 mlfat/butter
2 tbsp30 mlflour
1 cup240 mlstock
4 tbsp60 mlwhite wine
1 tbsp15 mltomato paste
onion
garlic
celery
bay leaf
1 tsp5 mlsalt
0.5 tsp2.5 mlblack pepper
pesto
mozzarella
sour cream (garnish)
chopped parsley (garnish)

Instructions

  1. Slice the meat if it is in one whole piece.
  2. Slice the pickles, chop the onion, garlic and celery.
  3. Spread each cutlet with mustard, add the ham, spread pesto, add a pickle and mozzarella.
  4. Roll up tightly into a roulade; tie if needed.
  5. Melt butter and olive oil and sear the rolls on all sides until golden. Remove them onto a plate.
  6. Put the onion, garlic and celery in the pan and sauté until softened.
  7. Add the wine, stock and tomato sauce. Once it warms, add the rolls back.
  8. Add bay leaf, a little salt and black pepper.
  9. Cover and leave on low heat for about 2 hours, turning the rolls from time to time.
  10. Remove from the heat and keep the rolls warm.
  11. Purée the sauce with the sour cream and flour. Season and, if needed, finish cooking the sauce until thickened.
  12. Return the roulades into the sauce until serving.
  13. Serve with boiled potatoes (dampfkartoffeln or parsley potatoes) or spaetzle noodles and red cabbage.
  14. Enjoy!
