
Vegetable Soup with Soy Sauce
A quick Japanese-style vegetable soup seasoned with Kikkoman soy sauce and finished with alphabet pasta and grated Parmesan. A soy-sauce fusion soup rather than a traditional Japanese dish, but built around Japanese soy sauce.
Ingredients

| 1 | large tomato, peeled and grated | |
| 1 tbsp | 15 ml | olive oil |
| 500 ml | stock | |
| 1 pack | frozen vegetables (peas and carrots or a mix of your choice) | |
| 1/3 cup | 80 ml | alphabet-shaped pasta |
| 3 1/2 tbsp | 53 ml | Kikkoman soy sauce |
| to taste | black pepper | |
| — | Parmesan cheese |
Instructions
- In a pot, saute the finely chopped onion until translucent. Add the stock and the vegetables straight from the freezer. Cover the pot and bring to a boil.
- Add the alphabet pasta, the Kikkoman soy sauce and the grated tomato, and reduce the heat.
- Simmer the soup for another 5-7 minutes, until the pasta softens but still holds its shape.
- Serve seasoned with black pepper and grated Parmesan cheese, if desired.
