
Walnut Pie
A very easy, addictively delicious no-bake walnut pie with a digestive-biscuit and walnut crust and a caramel walnut filling. Recipe by Mariela Nordel.
Ingredients
| 1 packet | digestive-type biscuits |
| — | walnuts (for the crust) |
| — | softened cow's butter (half the amount of the flour) |
| — | condensed milk (diet alternative to butter) |
| 4 coffee cups | walnuts (for the filling) |
| 2 coffee cups | sugar |
| 2 coffee cups | cream |
| 50 g | cow's butter |
| — | whole walnut halves, for garnish |
| — | liquid animal cream whipped with sugar and vanilla, for garnish |
Instructions
Walnut pie – very easy to make and addictively delicious.
- Grind 1 packet of digestive-type biscuits in a blender; grind walnuts into a fine flour as well and mix them in a 1:1 ratio to get a fine flour. To this add softened cow's butter in a 2:1 ratio (half as much butter) and knead until you get a firm dough. If you want it more diet-friendly, replace the butter with condensed milk, adding a little at a time and kneading until you reach a dense dough.
- Press the dough into a greased pie tin and leave it in the fridge to set. Crush 4 coffee-cups of walnuts into medium-sized pieces. In a pan, caramelize 2 coffee-cups of sugar and, when it starts to turn liquid, pour in 2 coffee-cups of cream and 50 g of cow's butter, stirring quickly. Be careful not to burn the sugar – the burner should not be too high.
- When you get a thick caramel sauce, pour the crushed walnuts into it, stir everything well, wait a little for it to cool slightly, and pour over the pie base. Return to the fridge to set.
- Garnish the chilled pie with whole walnut halves and liquid animal cream whipped with sugar and vanilla, and serve with a cup of hot chocolate.
