Warm Asparagus and Marinated Seafood

Difficulty: Easy. Chef's Note - Healthy Tip: The recipe provides 280 ml (10 oz.) of marinade. Although this amount is necessary to prepare the seafood, not a lot of it has to be included when serving: 2 tablespoons per plate will suffice. In this way, you can reduce the calories from the sauce by half (902.3 to 451.1), cutting the calorie count to about 209.2 per serving.

Ingredients

250 gquick-frozen assorted seafood
4spears of fresh white Austrian asparagus
1 tablespoon15 mlolive oil
salt and pepper
100 mlextra-virgin olive oil (olive oil and lime marinade)
1 clovegarlic, finely chopped (marinade)
2juice of limes or lemons (marinade)
1 tablespoon15 mlchopped parsley (marinade)
1 tablespoon15 mlchopped basil (marinade)
50 mlwhite balsamic vinegar (marinade)
salt and freshly ground pepper (marinade)
pinchsugar (marinade)
50 mlbeef broth (marinade)
50 mlwhite wine (marinade)

Instructions

Method:

  1. Thaw the seafood and sauté briefly in hot olive oil; season.
  2. In a small saucepan, combine all the ingredients for the marinade; warm slightly.
  3. Pour the lukewarm sauce over the seafood and marinate for 30 minutes.

Finishing and presentation:

  1. Meanwhile, pare the asparagus and cook in boiling water with a pinch of salt and sugar until al dente.
  2. Place the seafood onto plates; garnish each serving with a spear of white asparagus; drizzle on some of the marinade.
