Whole Grain Mustard Sauce Recipe

Ingredients
| 1 | minced shallot | |
| 125 ml (1/2 cup) | white wine | |
| 125 ml (1/2 cup) | gelatinous fish stock | |
| 125 ml (1/2 cup) | clam juice | |
| — | Fresh thyme | |
| 1 | bay leaf | |
| 65 ml (1/4 cup) | heavy cream | |
| 6 tbsp | 90 ml | unsalted butter |
| 1 tbsp | 15 ml | whole-grain Mustard |
| 1 tbsp | 15 ml | crème fraîche |
| 1 tsp | 5 ml | Horseradish |
| 1 tsp | 5 ml | chopped dill |
| 1 tsp | 5 ml | finely chopped chives |
Instructions
- Place the first 6 ingredients into a heavy saucepan; reduce over medium heat until one-third of the liquid remains;
- add the cream and heat until foamy; whisk in the butter;
- strain, pressing well to extract all the flavors; keep warm over a water bath;
- in a small bowl, combine the whole-grain mustard, horseradish and cream;
- whisk into the sauce;
- place again over the water bath; add the herbs and keep hot until serving time.
