
Amazake Warm Drink with Ginger
A naturally sweet, fermented rice drink — gentle, warming, and comforting without any added sugar, with a ginger bite at the end.
Ingredients
| 1 cup (200g) | thick amazake (rice-based, not sake-based) | |
| 1 cup (240ml) | hot water | |
| 1 teaspoon | 5 ml | fresh ginger, finely grated |
| 2 tablespoons | 30 ml | maple syrup (fully vegan) |
| a pinch | salt | |
| — | cinnamon or toasted rice for garnish (optional) |
Instructions
- Combine amazake and hot water in a small saucepan. Heat over medium-low heat, stirring, until warm. Do not boil.
- Add grated ginger and maple syrup. Stir to combine.
- Taste — add a pinch of salt to balance the sweetness.
- Pour into warm mugs. Garnish with a pinch of cinnamon or a few grains of toasted rice if desired. Serve immediately.
