
Caramelised fennel
The flavour of fennel becomes incredibly intense when the sugars in and around the fennel caramelize. This combines great with fennel seeds and a little lemon zest! Makes 1kg.

Ingredients
| 5 | fennel bulbs | |
| 50 g | butter | |
| 50 g | olive oil | |
| 50 g | cane sugar | |
| 1 tbsp | 15 ml | fennel seeds |
| 1 | lemon, zest | |
| — | salt and pepper |
Instructions
- Wash the fennel bulbs and cut them into vertical slices approx. 1cm thick.
- Heat the butter and olive oil and fry the fennel until golden brown on both sides.
- Sprinkle with the cane sugar and fennel seeds and caramelise.
- Season to taste with lemon zest, salt, and pepper.
Serving suggestions: • Vary by adding different herbs and spices, for example tarragon, coriander or ras el hanout. • As a basic ingredient in a lukewarm salad with various types of lettuce, rocket, and goat's cheese on the warm fennel. • As a vegetable garnish with fish dishes, e.g. with salmon gratineed with green herbs served with caramelised fennel and lemon risotto.
