Goat tajine

This is a classic stew from the Middle East which really brings out the flavour of the goat meat. Creation by Fokke Ophuis, ROC Friese Poort, Sneek, the Netherlands.

Ingredients

2 kghind leg of goat
30 gsunflower oil
300 gonion, finely chopped
1 clovegarlic, finely chopped
salt and pepper
30 gflour
500 mlwhite wine
500 mljus de veau
thyme
rosemary
bay leaves
2 gnutmeg
2 gground cumin
2 gground ginger
2 gturmeric
2 gground coriander
2 gground cinnamon
100 gapricots
100 gplums
50 galmonds, toasted
5 gcoriander leaves

Instructions

  1. Clean the goat’s leg and remove the bones and membrane.
  2. Cut the meat into identical cubes.
  3. Heat the sunflower oil in the tajine and fry the meat until golden brown all around.
  4. Add the chopped onion and garlic and fry briefly.
  5. Add the dried herbs and flour and heat briefly.
  6. Deglaze with white wine and add the jus de veau, thyme, rosemary, and bay leaves.
  7. Leave to simmer in a closed pan for 2.5 to 3 hours until the meat is done.
  8. Remove the cooked goat meat from the sauce.
  9. Pass the sauce through a sieve and season to taste.
  10. Leave the sauce to reduce a little longer to the desired consistency.
  11. Add the sauce and the goat meat together in a tajine.
  12. Garnish with apricots, plums, toasted almonds, and coriander.

Serving suggestions:

  • Serve as a stew with rice, mashed potato, or couscous.
  • Vary with raisins, dates, pine nuts, and pistachio nuts as a garnish.
