
Lavender dressing
A rich and intriguing lavender dressing that is enriched with Merlot vinegar. Perfect to serve with savoury dishes. Makes 250ml.

Ingredients
| 2 cloves | garlic |
| 60 ml | Merlot vinegar |
| 1 | lemon, juice |
| 6 g | dried lavender |
| 20 g | Dijon mustard |
| 150 ml | extra virgin olive oil |
| — | salt and pepper |
Instructions
- Lightly crush the garlic using the flat side of a knife and remove the skin.
- Place the garlic in a pan together with the vinegar, the lemon juice, and the dried lavender.
- Bring to the boil and allow to infuse for 10 minutes without reducing the liquid.
- Transfer the vinegar mixture to a measuring jug and add the mustard.
- Using a hand-held blender, emulsify the dressing by adding the olive oil to the vinegar in a thin stream.
- Season to taste with salt and pepper.
Serving suggestions:
- Delicious as a sauce or dressing with fruits de mer.
- Served with a salad with confit poultry, olives, and artichokes.
- In a composition with components of goat's cheese, green apple, and vanilla.
