
Dried Milk Foam
A beautifully simple recipe that turns whole milk and glucose into a spectacular crispy foam with pure milk flavour.

Ingredients
| 500 ml | whole milk |
| 100 g | glucose |
Instructions
- Heat the milk and glucose together, stirring continuously, until just below boiling point.
- Use a hand-held blender to whip the milk into a thick foam.
- Allow the foam to stabilise, then spoon carefully onto a baking tray lined with baking paper.
- Dry for six to eight hours in the oven at 68°C with the fan on its lowest setting.
- Store in an air-tight container with silicone granules in a dry place.
Serving suggestions: Delicious in a dessert with honey, black pepper and basil; with strawberries, vanilla and pistachio; or in a composition with bay leaf, lemon and black salsify.
