
Elderflower and Gin Jelly
A powerfully floral, clear gin-and-elderflower jelly infused with lemon rind and juniper, then blended into a gel.

Ingredients
| 400 ml | gin |
| 400 ml | elderflower syrup |
| 400 ml | water |
| 2 | lemon rind |
| 10 | juniper berries |
| 12 g | agar-agar |
Instructions
- Bring the gin to the boil and continue boiling for one minute.
- Add the elderflower syrup, water, lemon rind, and juniper berries.
- Bring back to the boil and remove from heat.
- Set aside to infuse for at least one hour.
- Pour through a fine-meshed sieve into a pan.
- Add the agar-agar.
- Bring back to the boil while whisking continuously.
- Cook the jelly for another 30 seconds.
- Pour into a tray and refrigerate to firm up.
- Blend to a gel.
Serving suggestions: As a component with strawberry, hibiscus, and hazelnut; with melon and orange; or in a dessert with red fruits and yoghurt ice cream.
